Ruby-red hibiscus flower water with a vibrant tartness balanced by just enough sweetness. First we make a dark concentrate, then dilute it and chill it with ice for a clean, refreshing finish. Simple, direct, and unmistakably bright.

Quickly rinse the hibiscus flowers in a strainer to remove dust. Bring part of the water to a boil, add the flowers, and simmer for 5 minutes, until the liquid turns deep red and smells tart and floral.
Turn off the heat, cover, and steep for 10 minutes. Strain the concentrate patiently, pressing the flowers only lightly; squeezing too hard can pull bitterness.
While the concentrate is still hot, dissolve the white sugar. Add the remaining water and the lemon juice little by little, tasting for balance: it should be tart and fresh, not red syrup.
Chill with ice and let it sit for 5 minutes before serving. The drink should be very cold, ruby-red, and cleanly tart enough to wake up the palate without scratching.
Turn what you find into an experience you can actually bring to your kitchen.
