A citrusy burst wrapped in deep cocoa elegance. These bonbons balance the vibrant acidity of fresh aguaymanto with the crisp shell of dark chocolate. A minimalist Peruvian confection, perfect for gifting or enjoying in one intense bite. Direct, fresh, and sophisticated.

Wash the aguaymanto gently and dry it very well. If it still has a nice husk, fold it back to use as a handle; if not, work with the clean fruit only.
Chop the dark chocolate so it melts evenly. Place it in a bowl with the cocoa butter and melt it over a gentle bain-marie, stirring until smooth, glossy, and free of chunks.
Remove the bowl from the heat and stir the chocolate for 1 minute to cool it slightly. It should stay fluid, but not so hot that it softens the aguaymanto.
Dip each aguaymanto in the chocolate, draining the excess against the edge of the bowl. Set them on parchment paper and finish with a tiny pinch of salt if you want to lift the cocoa flavor.
Refrigerate the bonbons for 15 minutes, until the coating feels firm to the touch. Serve them fresh or briefly at room temperature; they should crack with a thin shell and release the tart aguaymanto burst.
Turn what you find into an experience you can actually bring to your kitchen.
