  • 70 gRoasted Ground Coffee
  • 1.8 cupWater

Step by step

Preparation

    Heat the brewing **water** until it reaches a gentle boil, then turn off the heat. Wait **30 seconds** before using it; if it hits the **coffee** too aggressively, the brew tastes harsher.

    Set the cloth filter or drip brewer over a heatproof pitcher. Add the **ground roasted coffee** and level the surface without pressing it down hard.

    Pour just a little **water** over the **coffee** and wait **45 seconds**, until it is evenly wet and releases a roasted aroma.

    Add the remaining **water** little by little, in small circles. Let it drip for **5 to 6 minutes**, until you have a dark, clean, concentrated coffee.

    To serve, mix part of the concentrate with hot **water** until it reaches your preferred strength. It should taste aromatic, roasted, and full-bodied, not burnt or watery.
