Sweet Popcorn
Crunchy, golden and glossy, with popcorn kernels coated in light caramel. It smells like street-stall snack time but comes together cleanly in a home pot. Sweet, light and dangerously snackable.

Preparation

Have a lined tray ready and measure the **popcorn kernels**, **oil**, **sugar**, **water**, **lime juice** and **salt**. Once the caramel is hot, there is no time to get creative.

Heat the **oil** in a large pot over medium heat. Add the **popcorn kernels**, cover and shake the pot now and then for **4 to 5 minutes**, until the popping slows almost completely.

Transfer the popcorn to a large bowl and discard any unpopped kernels. Leave the empty pot over low heat for **30 seconds** to dry it before making the caramel.

In the same pot, add the **sugar**, **water**, **lime juice** and **salt**. Cook over medium heat for **4 to 5 minutes**, without stirring too much, until the caramel is **light golden** and smells like toasted sugar.

Turn off the heat, return the popcorn to the pot and mix quickly to coat it with caramel. Spread it on the tray and let it cool for **5 minutes**, until **dry**, glossy and crunchy.
