The creamy sweetness of the rainforest concentrated into a drink that comforts deeply. It is the taste of the Amazon in its purest and most soothing form, a daily ritual that turns ripe plantain into warm energy. Liquid tradition with the rhythm of the jungle.

Peel the ripe plantains and cut them into medium chunks. They should be deep yellow, with dark spots and a sweet aroma; that ripeness gives chapo its body and natural sweetness.
Place the ripe plantain in a pot with the water and cinnamon if using it. Simmer gently for 18 to 20 minutes, until the plantain is very tender and can be mashed without resistance.
Remove the cinnamon. Blend the plantain with its cooking liquid for 45 to 60 seconds, until thick and smooth. If you prefer a more rustic texture, mash it in the pot with a spoon and stir firmly.
Return the chapo to the pot, adjust with sugar
