A Peruvian pisco classic made to be served ice-cold with lively bubbles. Pisco stays front and center, lifted by lime, ginger ale, and just enough bitters to lengthen the finish without hiding the grape. Light, citrusy, and dangerously easy to refill.

Fill four highball glasses nearly to the top with ice. Divide the pisco, lime juice, and Angostura bitters among them and stir gently for 5 seconds, just until the glasses feel well chilled and the base is combined.
Top each glass with well-chilled ginger ale, pouring slowly to preserve the carbonation, then give it one gentle stir. Finish each Chilcano with a thin slice of lime and serve immediately. And that is it! It should arrive ice-cold and sparkling, with the pisco still clearly present behind the citrus and ginger. 🥂
