A tropical burst wrapped in dark cacao. These chocotejas hold a silky ganache heart, where reduced passion fruit brings the bright acidity that wakes up the senses. A jewel of Peruvian confectionery: elegant, deeply local, and built on a masterful contrast of textures and flavors.

Turn what you find into an experience you can actually bring to your kitchen.

Dry the chocoteja mold very well and have a piping bag ready. Chop the bitter chocolate and the couverture chocolate separately; chocolate hates water, and it does not negotiate.
Cook the passion fruit pulp with the glucose and white granulated sugar over medium heat for 6 to 8 minutes, until reduced, glossy and intense. It should be thicker, but still fluid.
Pour the hot reduction over the couverture chocolate, cream, cocoa butter and salt. Rest for 2 minutes and stir from the center until smooth; let it cool until thick enough to pipe.
Melt two thirds of the bitter chocolate in short microwave bursts, stirring between each one, until it reaches 45°C. Add the remaining chocolate and stir until it drops to 31–32°C; it should look fluid, glossy and lump-free.
Fill the mold with the tempered bitter chocolate, tap gently to release bubbles and turn it over to remove the excess. Refrigerate for 8 minutes, until the shell looks firm and matte around the edges.
Fill each cavity with the passion fruit ganache, leaving a free edge for sealing. Cover with the remaining bitter chocolate, scrape off the excess with a spatula and refrigerate for 12 minutes, until the base is firm.
Unmold carefully and let the chocotejas rest for 15 minutes at room temperature before serving. They should be firm, glossy and filled with a silky center that does not run out on the first bite.
