Herbal and elegant, this sour transforms the essence of the Andes into a citrus silk. Its dense foam and botanical character are a tribute to our sacred leaf, masterfully balanced with the strength of pisco. A sophisticated, vibrant experience with its own identity.

Measure the coca-leaf-infused pisco, lime juice, and gum syrup. Think through the balance: it should be herbal, citrusy, and sweet enough to support the foam, not turn into syrup.
Pour the pisco, lime, gum syrup, and egg white into the shaker without ice. Seal it firmly and dry shake for 12 to 15 seconds, until the mixture feels foamy and fuller.
Open the shaker, add the ice, and shake hard again for 10 to 12 seconds, until the metal feels very cold on the outside. Do not overdo it: the sour wants chill, not water.
Turn what you find into an experience you can actually bring to your kitchen.

Strain the cocktail and serve immediately. Finish with a few drops of Angostura bitters over the foam and a coca leaf as an aromatic nod. It should be cold, silky, and capped with dense foam.
