Andean essence concentrated in a deep-colored preserve with a vibrant sweet-tart flavor. This artisanal preparation captures the wild freshness of elderberry, transforming it into a honeyed bite that evokes the countryside and tradition. A handcrafted treasure to awaken your breakfasts.

Wash the elderberries and remove stems, leaves, or green berries. Keep only ripe, dark fruit; that cleanup defines a deep preserve, not a bitter one.
Finely grate the apple and mix it with the elderberries, white sugar, lemon juice, and water. Let it rest for 10 minutes, until the fruit begins releasing juice.
Transfer everything to a pot and cook over medium heat for 8 minutes, stirring often, until the sugar dissolves and the elderberries burst, releasing a deep purple color.
Lower the heat and cook for 22 to 28 minutes, crushing part of the fruit against the pot. The preserve should thicken, look glossy, and coat the spoon without running like water.
Turn what you find into an experience you can actually bring to your kitchen.

Check the set on a cold plate: add a teaspoon, wait 1 minute, and push it with your finger. If it wrinkles softly and does not spread out, it is ready; if still too loose, cook for 5 more minutes.
Transfer the hot preserve into a clean glass jar and let it cool for 25 minutes before covering and refrigerating. It should be thick, sweet-tart, and deeply colored with Andean elderberry.
