A Peruvian dessert pairing creamy lúcuma with a crisp pecan meringue. Sweet, chilled, and full of contrast, it combines a smooth mousse with a base that cracks gently when sliced. Elegant without becoming fussy, and perfect for serving to guests.

Preheat the oven to 150°C and line the bottom of a springform pan with parchment paper. Beat the egg whites for 2 minutes, until foamy and holding soft peaks; gradually add the sugar and continue beating for 2–3 minutes, until the meringue is glossy and firm. Fold in the pecans gently.
Spread the meringue in the pan and bake for 25 minutes, until the surface is dry, lightly golden, and firm when touched gently. Remove from the oven and cool for about

While the base cools, combine the unflavored gelatin with the water and let it hydrate for 5 minutes. Microwave it for about 10 seconds and stir until completely liquid and smooth; do not boil it.
Blend the lúcuma pulp, condensed milk, and vanilla for 30 seconds, until the mixture is smooth and lump-free. Add the dissolved gelatin and blend again briefly. Separately, whip the whipping cream to soft peaks and fold it in gently, keeping the mousse airy but substantial.
Pour the mousse over the cooled crunch layer and lightly smooth the top. Refrigerate for 45 minutes, until the center is set when the pan is moved but still creamy when sliced. Unmold and serve cold; the spoon should pass through soft mousse and meet the dry pecan crunch underneath. And that’s it—lúcuma on top, crack underneath.
