An Amazonian fruit preserve made from cocona, simmered with sugar until glossy and thick. A touch of lemon sharpens the acidity while cinnamon stick adds warm aroma without taking over. The result sits between jam and set gel: bright, sweet-tart, and deeply fruity.

Wash the cocona, remove the dark stem end, and cut it into pieces. Discard bruised or overly dark spots; the pulp should smell fresh, tart, and tropical.
Place the cocona in a pot with the water and cinnamon stick. Cook over medium heat for 10 to 12 minutes, until the fruit is soft and starts releasing juice.
Remove the cinnamon for a moment, mash the fruit with a spoon, and add the brown sugar. Return the cinnamon and cook for 18 to 22 minutes, stirring often, until the preserve thickens and looks glossy.
Add the lemon juice and cook for 2 minutes
Turn what you find into an experience you can actually bring to your kitchen.

Remove the cinnamon, transfer the cocona preserve to clean jars, and let it cool. Serve at room temperature or chilled; it should be sweet-tart, glossy, and somewhere between jam and gel.
