Comforting, mellow body defined by the sweetness of quince and the essence of toasted barley. It is the traditional refuge of Lima mornings, a warm drink that balances herbal depth with a bright citrus touch. Aromatic, soothing, and deeply restorative.

Toast the hulled barley in a dry skillet for 4 to 5 minutes, stirring often, until it smells nutty and toasted. Do not burn it: bitterness sticks like bad gossip.
Wash the quince, cut it into quarters, and remove only the hard core if it is too woody. The peel helps aroma and body, so do not discard it automatically.

Add the lemongrass and chamomile during the final 5 minutes of simmering. This lets them perfume the drink without turning dull or tired-tasting.
Strain the emoliente through a fine-mesh strainer, gently pressing the quince and flaxseed to recover body without forcing coarse solids through. It should be clean, but not watery.
Return the strained liquid to the pot, add the chancaca, and heat for 3 to 4 minutes, until dissolved. Taste it: it should be sweet, but still herbal and fruity.
Turn off the heat and add the key lime juice right before serving. Serve hot or properly warm, with a mellow texture, quince aroma, and a citrus edge that wakes up the glass.
