A hot Peruvian emoliente built on barley and pineapple rind, infused with herbs and warm spices. Flaxseed brings the signature light viscosity, somewhere between a drink and a warm blanket. Dark, aromatic, and finished with a bright citrus lift.

Rinse the barley and flaxseed in a colander to remove dust. Wash the pineapple rind and keep the horsetail, boldo, lemongrass, cinnamon, and cloves ready; this is not glamour, it is a pot with purpose.

Turn what you find into an experience you can actually bring to your kitchen.

Add the flaxseed, horsetail, boldo, and lemongrass. Simmer gently for 12 to 15 minutes, until the emoliente looks slightly thicker and the herbal aroma comes through without turning bitter.
Strain the emoliente, pressing the solids gently without crushing the flaxseed into a paste. Return the liquid to the pot, add the chancaca, and heat for 3 minutes, until fully dissolved.
Turn off the heat and add the lemon juice right before serving. It should be hot, dark, aromatic, and lifted by a fresh final acidity, not tired cooked lemon.
