A Peruvian salad with fluffy quinoa coated in a fresh avocado, yogurt, and lime dressing. Crisp vegetables and clean acidity keep it lively, with enough body to stand on its own or accompany lunch; creamy without feeling heavy, and dangerously easy to go back for.

Turn what you find into an experience you can actually bring to your kitchen.

Place the quinoa in the fine-mesh strainer and rinse it with part of the water in 3 short batches, gently rubbing the grains and draining between each rinse, until the water runs much clearer and there is barely any foam. Drain very well before cooking.
Transfer the quinoa to the pot with the remaining water and part of the salt. Once it boils, reduce to low heat, cover, and cook for 6 minutes; then scatter the corn over the top, cover again, and cook for another 9 to 10 minutes, until no liquid is visible and the quinoa shows its little ring. Transfer it to the bowl, fluff gently, and spread it out so the strong steam can escape while you finish the rest.
While the quinoa cooks, dice the cucumber and tomato into small, even pieces and finely chop the red onion. Keep them ready without mixing them into the hot quinoa yet, so they stay fresh and firm.
Blend the avocado, plain yogurt, lime juice, cilantro, ground garlic, pepper, and the remaining salt for 20 to 30 seconds, until the dressing is smooth, green, and pourable, loose enough to coat the quinoa without becoming watery.
When the quinoa is warm and no longer giving off strong steam, pour over the dressing and fold it through with broad strokes. Add the cucumber, tomato, and onion, mixing only until evenly distributed without crushing them. Serve right away, cool or at room temperature: it should be creamy, fluffy, and crisp with vegetables. And that's it! If every grain is still distinct beneath the dressing, it came out just right. ✨
