Mint Lemonade

Preparation

Blend **half the water** with the **sugar** for **20 seconds**, until dissolved and clear. This keeps sugar grains from floating around in the glass.

Add the **lemon juice**, **mint leaves**, and the remaining **water**. Blend for only **8 to 10 seconds**, until the mint perfumes and lightly colors the drink; overblending can make it bitter.

Strain the lemonade into a pitcher with **ice** and stir. Serve very cold, with bright acidity and a clean herbal aroma.
