Natural, comforting sweetness defined by the unmistakable aroma of star anise. It is a classic digestive tea at the Peruvian table, a calming ritual that perfumes the cup with clean warmth. Simple, soothing and deeply traditional.

Measure the water and check the star anise. If any pod is very broken or dusty, shake it lightly so the infusion stays clean.
Heat the water until it reaches a gentle boil. Add the star anise, lower the heat and simmer for 3 minutes, until the aroma feels sweet and spiced.
Turn off the heat and let it steep for 5 minutes. Strain the tea; it should be clear, fragrant and not heavy-tasting.
Sweeten with honey if using and serve very hot. The tea should feel aromatic, gentle and clean, not like syrup pretending to be digestive.
Turn what you find into an experience you can actually bring to your kitchen.
