A home-style chicken milanesa with juicy breast meat, garlic, mustard, and oregano seasoning, and a thin golden crust that stays crisp without becoming heavy. It is seasoned, breaded, and fried straight away with no unnecessary marinating. Fast, economical, and built for regular family meals.

Slice the chicken breast into 4 evenly thick cutlets, about 8 to 10 mm thick. If one section is much thicker, butterfly it horizontally with the knife rather than pounding it excessively thin. Pat the chicken dry and coat it with the ground garlic, mustard, oregano, salt, and pepper, rubbing the seasoning over both sides. No resting time is needed; once every cutlet is evenly seasoned, move straight to the breading.
Turn what you find into an experience you can actually bring to your kitchen.

Place the flour in one dish, beat the egg in another, and add the breadcrumbs to a third. Coat each cutlet first in flour and shake off the excess thoroughly; dip it in egg and let the excess drip away, then coat it in breadcrumbs, pressing gently with your fingers. When finished, each piece should have a thin, dry, fully adhered coating without thick clumps of breadcrumbs.
Heat the vegetable oil in a wide skillet over medium heat. When a pinch of breadcrumbs sizzles as soon as it touches the oil, fry the cutlets in 2 batches without crowding them for 2½ to 3 minutes per side. Flip only once and remove when they are deeply golden and crisp and the thickest part of the chicken reaches 74°C. Drain for 1 minute on paper towels and serve immediately. And that's it! Dry crisp coating, juicy chicken, and no unnecessary waiting: exactly how a home milanesa should be 😌
