A classic Chifa pickle: crunchy radish with a sharp sweet-and-sour bite that resets your palate. Thin slices are salted to draw out moisture, then macerated in white vinegar with a touch of ají amarillo. Clean, punchy, and built to balance richer dishes.

Peel the radish if the skin is thick, then cut it into very thin slices. If you have a mandoline, use it carefully: each slice should be flexible but still firm.
Mix the radish with the salt and let it rest for 25 minutes, until it releases plenty of water and feels more flexible. Rinse briefly and drain very well; if it stays soaked, the pickle turns weak.
Dissolve the white sugar in the white vinegar and water. Add the ají amarillo strips and the MSG if you want a more Chifa-style edge. The brine should taste sweet-sour, sharp, and clean.
Turn what you find into an experience you can actually bring to your kitchen.

Combine the well-drained radish with the brine and pack it into a clean jar. Refrigerate for at least 45 minutes, until the slices are cold, crunchy, and fully touched by the sweet-sour bite.
