The Best Criollo Breakfast built around freshly crisped chicharrón. Crunchy French rolls, juicy pork, sweet potato, and sharp salsa criolla come together in a hearty bite that makes getting up early for breakfast feel completely worthwhile.

Turn what you find into an experience you can actually bring to your kitchen.

Cut the pork belly into large pieces and place it in a wide pot with the water and most of the salt. Bring to a boil, lower to medium heat, and cook uncovered for 35 to 45 minutes, turning a couple of times, until the meat is tender when pierced and the water has almost completely reduced; if the pork is already tender but plenty of liquid remains, raise the heat for a few minutes to finish evaporating it.
While the pork cooks, slice the red onion into thin feathers and toss it with the ají limo, cilantro, lime juice, black pepper, and the remaining salt. Let it sit while you finish the chicharrón; it should stay sharp, fresh, and crisp, never soft or watery.
Once no visible water remains and the pork fat starts to sizzle, lower to medium heat and continue cooking the pork belly for 8 to 10 minutes, turning it so it browns evenly. Remove it when the edges are deeply golden and crisp while the meat remains juicy inside; keep the rendered fat in the pot.
Peel the sweet potato and cut it into slices about 7 mm thick. Add the vegetable oil to the hot rendered fat in the pot and fry the sweet potato in batches for 3 to 4 minutes per side, until golden outside and completely tender in the center. Lift it out with a slotted spoon and drain on paper towels.
Split the French rolls without cutting all the way through and warm them in a dry skillet for 30 to 45 seconds per side, until the crust turns crisp again. Fill each one with sweet potato, hot chicharrón, and salsa criolla without crushing the meat. If the bread crunches, the pork stays juicy, and the onion cuts through the richness with freshness, it came out right. Done! Eat it hot—this is the kind of breakfast that makes Sunday start better. 😌
