A cold, straight-shooting cocktail: pisco with pineapple juice, lemon juice, and gum syrup. Tropical, citrusy, and clean; light on the tongue but with real structure. Shake well and pour.

Measure the Quebranta pisco, pineapple juice, lemon juice, and gum syrup. Everything should be cold so the drink comes out fresh without depending on extra ice.
Fill the shaker with the ice and add the pisco, pineapple juice, lemon juice, and gum syrup. Shake hard for 12 to 15 seconds, until the shaker feels very cold on the outside.
Strain into a chilled glass and serve right away. It should be fruity, citrusy, and clean, with the pisco present and just enough sweetness to round out the pineapple.
