An American classic with a rugged, crunchy crust and juicy, well-seasoned chicken. This home-style version keeps everything people love about fried chicken without hard-to-find ingredients. Deeply golden, savory, and dangerously difficult to stop eating.

Turn what you find into an experience you can actually bring to your kitchen.

Pat the chicken pieces thoroughly dry. Mix the fresh milk with the lime juice, two fifths of the salt, and roughly two fifths each of the garlic powder, smoked paprika, cayenne, and black pepper. Add the chicken, coat thoroughly, and refrigerate for 20 minutes.
While the chicken marinates, combine the flour, cornstarch, and the remaining salt, garlic powder, paprika, cayenne, and black pepper. Work everything through with your fingers until the seasoning is evenly distributed.
Add the remaining milk marinade to the dry mixture and rub it through with your fingertips to form small clumps. Remove one chicken piece at a time from the marinade, let the excess drip off, and press it firmly into the flour mixture, packing coating onto every side. The coating should look rugged, dry on the surface, and firmly attached.
Heat the vegetable oil in a large pot to 165°C. Fry the chicken in uncrowded batches, keeping the oil roughly between 160 and 170°C, and turn the pieces every few minutes. Cook for 12 to 16 minutes, removing each piece when it is deeply golden, very crisp, and reaches at least 74°C in the thickest part of the meat without touching bone.
Transfer each batch to a cooling rack so steam can escape from underneath and the crust stays crisp. Serve as soon as the final batch is done, while the chicken is still hot, juicy, and audibly crunchy. And that's it! If the first bite makes noise, you accomplished exactly what we came here to do. 🔥
