A highland punch where maca leads and a light foam keeps every sip from feeling heavy. Milk and vanilla soften its earthy character into something warm, creamy, and still easy to drink. It is the kind of cup that makes breakfast worth stretching out for another five minutes.

Set aside one quarter of the cold water and whisk it with the maca flour until completely smooth. Bring the remaining water to a gentle boil, stream in the maca mixture, and cook over medium-low heat for 8 minutes, whisking often, until the raw floury taste is gone and the drink has lightly thickened while still flowing easily from the whisk.
Add the evaporated milk, three quarters of the sugar, and the vanilla. Keep it over low heat for 2 to 3 minutes, whisking occasionally, until the punch is very hot and completely smooth, without letting it boil hard. Reduce the heat to its lowest setting while you prepare the foam.
Turn what you find into an experience you can actually bring to your kitchen.

In a clean bowl, beat the egg whites until foamy; gradually add the remaining sugar and continue whisking for 3 to 4 minutes, until they form soft peaks. While whisking continuously, slowly add two ladles of the hot maca mixture to temper the whites; then return everything to the pot and cook over low heat for 2 to 3 minutes, whisking constantly, until the drink is steaming, creamy, and topped with a fine foam, with no loose raw egg white remaining. If you check the temperature, it should reach 74°C. Serve immediately. Get that foam into the cup before it has a chance to settle! 😌
