Quispiña: a traditional Andean steamed bun with a dense crumb and a clear quinoa flour character. Food-grade lime gives it that classic structure: firm outside, chewy inside. It is steamed over corn husks so it releases cleanly with a subtle aroma.

Soak the corn husks with part of the hot water for 5 minutes, until flexible. Drain them and reserve the most intact ones to line the steamer.
Dissolve the food-grade lime and salt in the warm water for the dough. Use only food-grade lime and measure it exactly: “more or less” is not tradition here, it is sabotage.
Add the quinoa flour little by little and mix by hand until a firm, moist, compact dough forms. Knead only 2 to 3 minutes, just until no dry patches remain.
Cover the dough and rest it for 8 minutes
Turn what you find into an experience you can actually bring to your kitchen.

Boil the remaining water in a pot with a steamer basket. Line the base with the husks, arrange the quispiñas without crowding, cover, and steam for 25 to 30 minutes.
Turn off the heat and rest for 5 minutes with the lid slightly open. Serve warm, when firm outside, chewy inside, and releasing cleanly from the husk.
