An Andean cañihua refresher with an earthy base and warm notes of cinnamon and clove. It simmers gently to release color and body, then gets strained and cooled until smooth and light. Sweetened with honey, it tastes warm but drinks refreshing.

Rinse the cañihua in a fine-mesh strainer until the water runs less cloudy. Do not soak it; we only want to remove dust and keep the flavor clean.
Boil the water with the cinnamon and cloves. Add the rinsed cañihua and simmer over medium-low heat for 25 minutes, until the liquid turns lightly toasted in color and smells spiced.
Strain the drink slowly, pressing the cañihua only lightly to extract flavor without making the refresher heavy. Remove the cinnamon and cloves.
While the drink is still warm, dissolve the honey and let it cool. Serve cold or at room temperature; it should be smooth, lightly sweet and clearly spiced.
