Italian mushroom risotto with toasted Arborio rice, white wine, and hot stock added gradually. Deeply browned mushrooms bring earthy flavor, while butter and Parmesan are emulsified off the heat for a glossy, flowing, deeply savory finish.

Turn what you find into an experience you can actually bring to your kitchen.

Wipe the mushrooms clean with slightly damp paper and slice them. Finely chop the white onion and parsley. Place the vegetable stock in a separate pot and keep it very hot at the gentlest simmer throughout the preparation.
Heat a wide skillet over medium-high heat with the olive oil and 35% of the butter. Add the mushrooms in as broad a layer as possible and cook for 6–8 minutes, stirring only occasionally, until they release their moisture, it evaporates, and deeply browned areas develop. Season with 20% of the salt and half the pepper. Reserve one quarter for serving.
Melt another 25% of the butter in a medium pot over medium heat and cook the white onion for 3–4 minutes, until translucent and tender without browning. Add the Arborio rice and toast for 2 minutes, stirring, until the grains are hot and slightly pearly. Pour in the white wine and cook for 1–2 minutes, until nearly evaporated and the raw alcoholic aroma has disappeared.
Add about 90% of the hot stock, one or two ladles at a time, maintaining a gentle simmer and stirring frequently. Wait until each addition is almost absorbed before adding more. Continue for 16–18 minutes. With about 5 minutes remaining, fold in three quarters of the browned mushrooms and 60% of the salt. Stop when the rice is al dente, with a faintly firm center, and the mixture still flows when the pot is tilted.
Remove the pot from the heat. Add the remaining 40% of the butter, well chilled, and the Parmesan. Stir vigorously for 1–2 minutes until the fat, starch, and stock emulsify into a glossy, silky cream. Fold in the parsley, remaining pepper and salt, and use the final 10% of the stock to adjust the consistency until the risotto forms a slow wave when the pot is moved. Serve immediately with the reserved mushrooms on top. If it stands like mashed potatoes, it has gone too far: risotto should move.
