A bold, orange-hued breakfast straight from Huacho. The sausage turns deeply savory and browned between folds of still-juicy scrambled egg, ready to tuck into warm French rolls. It comes together in minutes and has the kind of aroma that makes people mysteriously appear in the kitchen.

Remove the casing from the Huacho sausage and crumble it with your fingers into small pieces without turning it into a paste. Place the eggs in a bowl and mix only until the whites and yolks come together; they do not need to become foamy.
Place the sausage in a cold nonstick pan and set it over medium heat. Cook for 5 to 6 minutes, breaking it apart and turning it as it releases its own orange-tinted fat, until fully cooked, fragrant, and browned in spots. There is no need for extra oil or salt; the sausage already brings plenty of both.
Reduce the heat and pour the eggs over the sausage. Stir with broad folding motions for 1½ to 2 minutes, letting the egg form around the sausage pieces until set but still glossy and juicy. Remove the pan from the heat while the eggs still look slightly moist; residual heat will finish them.
Turn what you find into an experience you can actually bring to your kitchen.
