Juicy, warmly spiced, and unmistakably orange, Huacho sausage is crumbled in a skillet and folded into soft eggs until rich and glossy. French bread catches every bit of achiote-tinted goodness, turning a simple breakfast into something worth waking up hungry for.

Remove any casing from the Huacho sausage, if present, and crumble it into small pieces with your hands. Lightly beat the eggs in a bowl just until the whites and yolks come together.
Heat a nonstick skillet over medium heat and add the Huacho sausage without extra oil. Cook for 6 to 8 minutes, breaking it apart with a spatula, until no raw-looking meat remains, the edges are browned, and its characteristic orange fat has rendered.
Lower the heat and pour the beaten eggs over the sausage. Stir continuously for 1 to 2 minutes, scraping the bottom and folding the mixture over itself, until the eggs are set but still moist and glossy. Take the skillet off the heat as soon as it reaches that point so the scramble does not dry out.
Split the French bread and fill it generously with the hot sausage-and-egg scramble. Serve immediately: once the bread starts soaking up that orange, savory richness while the eggs are still juicy, stopping at just one becomes a difficult argument to make.
