Deep green, fresh aroma, and a creamy-yet-grainy texture. This pesto is built in a mortar: fully dry basil, crushed pine nuts and garlic, then aged cheeses and olive oil added in a thin stream so it emulsifies. Bold, clean, and ready to coat pasta with no cooking.

Pick the basil leaves, rinse them only if needed, and dry them carefully until no visible moisture remains. Remove thick stems: pesto should smell like fresh leaves, not crushed stalks.
Pound the garlic with the salt in the mortar until it forms a paste. Add the pine nuts and work for 2 to 3 minutes, until creamy but still finely textured, not completely smooth.
Add the basil in batches and pound with short movements, pressing it against the sides of the mortar. Work for 4 to 5 minutes, until the green deepens and the mixture releases a fresh aroma without warming up.
Turn what you find into an experience you can actually bring to your kitchen.

Fold in the Parmesan and Pecorino. Then stream in the olive oil, mixing gently for 1 to 2 minutes, until the pesto is creamy, glossy, and finely grainy. Use it at room temperature; if tossing with pasta, loosen it with a splash of hot cooking water off the heat.
