Drain the **tuna** well and flake it with a fork. Finely chop the **celery** and **red onion**; the small cut gives crunch without taking over every bite.

Mix the **mayonnaise**, **lime juice**, **mustard**, **salt** and **pepper** until smooth. It should taste fresh and evenly seasoned, not overly tart.
