Step by step

Preparation

    Let the **butter** sit out for a few minutes, until soft and spreadable. If it is too hard, it tears the **sandwich bread**; if melted, it makes the bread too greasy.

    Spread a thin layer of **butter** on one side of each slice of **sandwich bread**. That side will face outward, directly against the heat.

    Build each sandwich with **Edam cheese**, **cooked ham** and another layer of **Edam cheese**. Close it with the buttered sides facing out and press lightly to compact without smashing.

    Heat a pan over medium heat and place the sandwiches in. Toast for **3 to 4 minutes per side**, pressing gently with the spatula, until the bread is **golden** and the cheese starts melting.

    Remove the **ham and cheese sandwiches** and let them rest for **1 minute** before cutting. That short rest keeps the cheese from spilling out and the bread crisp.
