Tender tripe cut into thin strips, served cold and cured in a punchy red wine vinegar and lime dressing. Red onion and ají limo bring crunch and clean heat, while parsley finishes with a fresh herbal lift. Bright, acidic, and proudly chewy.

Rinse the precooked beef tripe under cold water and drain it. Place it in a pot with the water, bay leaf, and part of the salt; simmer gently for 12 minutes, until it smells clean and feels tender.
Turn what you find into an experience you can actually bring to your kitchen.

Drain the tripe, discard the water and bay leaf, and let it cool for 10 minutes. Then cut it into thin, even strips, with enough bite so it does not look like sad chopped leftovers.
Slice the red onion thinly. If it is too sharp, rinse it quickly and drain it well; it should stay crisp, not watery. Chop the ají limo and parsley.
Mix the red wine vinegar, lime juice, vegetable oil, the remaining salt, and ground black pepper. Whisk for 20 seconds, until the dressing looks glossy and well combined.
Add the sliced tripe to the dressing and toss for 30 seconds, lifting well so every strip gets cured. It should be juicy and acidic, not drowned like a cold soup.
Fold in the red onion, ají limo, and most of the parsley. Refrigerate for 15 minutes, until the tripe is cold and the onion is still crisp.
Finish with the remaining parsley and serve cold or at a cool room temperature. The sarsa should feel bright, clean, and proudly springy.
