A Lima classic that turns a bowl of soup into a complete meal. Its red ají panca and tomato broth is gently creamy, with browned beef, fine noodles, tender egg, and the unmistakable perfume of oregano. Once it starts steaming, a cold evening already has a plan.

Turn what you find into an experience you can actually bring to your kitchen.

Cut the beef steak into short strips and season with part of the salt and all of the black pepper. Heat part of the vegetable oil in the pot over high heat and sear the beef for 2 to 3 minutes, moving it only as needed, until it has browned edges but still feels juicy. Remove and set aside.
Lower the heat to medium, add the remaining oil, and cook the red onion for 4 minutes, until soft and translucent. Add the garlic, ají panca, and cumin; stir for 1 minute until deeply aromatic. Add the tomato and half of the oregano, then cook for another 4 to 5 minutes, until the base is red, thick, and glossy, with no raw tomato taste.
Pour in the water, return the beef, and add the remaining salt. Once it boils, lower to medium heat and cook for 7 minutes, until the broth develops a deep red color and clearly beefy flavor. Add the angel-hair noodles and cook for 3 minutes, stirring at first so they do not clump, until tender but still holding some texture.
Lower the heat so the soup barely simmers and stir in the evaporated milk. Crack the eggs one at a time into separate areas of the pot, cover, and cook for 3 to 4 minutes, until the whites are set and the yolks are still soft. Avoid a hard boil after adding the milk so the broth stays smooth and creamy.
While the eggs finish, toast the baguette in a dry skillet for 1 to 2 minutes per side, until the edges are crisp. Turn off the heat, rub the remaining oregano between your palms, and let it fall over the pot. Serve piping hot with one egg in each bowl and the toast alongside. If the broth is red and silky, the noodles still hold their shape, and the oregano rises with the first steam, it is right on point. Done! That first spoonful deserves to arrive steaming. 😌
