Pure marine essence defined by the deep umami of mussels and the comforting smoothness of evaporated milk. It is the heartbeat of Peruvian ports, a soup that restores your energy and pulls you toward the sea breeze. Direct, nourishing, and carrying that coastal warmth only Callao can give.

Turn what you find into an experience you can actually bring to your kitchen.

Wash the mussels well under cold water, scraping off any visible grit. Discard any that are cracked or do not close when gently tapped; seafood safety is not negotiable. Chop the onion, tomato, yellow chili, potato, celery, and cilantro before turning on the heat.
Bring the water to a boil with the celery. Add the mussels and cook for 5 to 6 minutes, just until they open and the broth smells clean and briny. Remove the mussels, strain the broth, and discard any mussel that remains closed; remove the meat from the shells if you want an easier soup to eat.
In the same pot, heat the oil and cook the onion for 5 minutes, until soft and sweet-smelling. Add the ground garlic, yellow chili, tomato, oregano, pepper, and salt; cook for 4 more minutes, until the tomato softens and the sofrito gains color.
Pour the strained broth over the sofrito and let it return to a boil. Add the potato and cook for 8 minutes; then add the pasta and cook for 7 to 8 more minutes, until the potato is tender and the pasta is cooked without falling apart.
Lower the heat and add the evaporated milk gradually, stirring so the broth turns creamy without boiling hard. Return the mussels to the pot, heat for 2 minutes, and finish with the cilantro. Serve very hot, with broth covering potato, pasta, and mussels in every bowl.
