Step by step
Preparation

Chop the **onion**, **garlic**, **leek** and **celery** small. Peel the **yellow potatoes** and **carrot**; dice them along with the **squash** so everything cooks evenly.

Heat the **oil** and cook the **onion**, **leek** and **celery** for **5 minutes**, until soft and translucent. Add the **garlic** and cook for **1 more minute**, without letting it brown hard.

Pour in the **vegetable broth** and add the **yellow potatoes**, **carrot**, **squash**, part of the **salt** and the **pepper**. Simmer gently for **12 minutes**, until the potato is almost tender.

Add the **peas**, **angel hair pasta**, **oregano** and remaining **salt**. Cook for **4 to 5 minutes**, until the pasta is tender and the soup stays clear.

Turn off the heat, add the **parsley** and rest for **3 minutes**. Serve hot; the vegetables should be tender but recognizable, not lost in a shapeless soup.
