A classic Peruvian-Chinese soup with a clear aromatic broth, filled wontons, chicken, and noodles. Light yet satisfying, with the characteristic fragrance of ginger and sesame.

Turn what you find into an experience you can actually bring to your kitchen.

Place the bone-in chicken breast in a large pot with most of the water, a little over half of the ginger, half the salt, and half the white pepper. Bring to a boil, skim off any foam, and simmer gently for 28 to 30 minutes, until the broth is clean-tasting and the chicken is fully cooked.
While the broth simmers, mix the ground pork with a little over one-third of the scallions, the remaining ginger, the cornstarch, a little under half of the soy sauce, part of the sesame oil, and the remaining salt and white pepper. Mix for 1 to 2 minutes, until the filling becomes tacky.
Place a teaspoon of filling in the center of each wonton wrapper. Lightly moisten the edges with the remaining water, fold into a triangle, and press out the air while sealing firmly. Bring the two side corners together for the classic shape if desired. You should have 16 tightly sealed wontons with no filling exposed.
Remove the chicken from the pot and strain the broth. Once cool enough to handle, remove the meat from the bone and cut or shred it into medium pieces. Return the broth to the pot, add the remaining soy sauce, and bring it back to a gentle boil.
Add the wontons and Chinese noodles to the gently boiling broth and cook for 5 minutes. Add the cooked chicken and chopped Chinese cabbage and cook for 2 more minutes, until the wontons are tender and the cabbage remains green and slightly firm.
Turn off the heat, add the remaining sesame oil, and finish with the remaining scallions. Serve immediately, distributing the chicken and 4 wontons per portion. And that is it! The broth should remain clear, the wontons intact, and the aroma of ginger and sesame should arrive before the first sip. 🥣
