A chifa noodle dish built to be truly taypá. Chinese noodles, mixed proteins, and crisp vegetables leave the wok coated in a glossy savory sauce. Generous without becoming heavy, it is the plate for when you want the full chifa experience.

Turn what you find into an experience you can actually bring to your kitchen.

Cut the chicken breast and beef steak into thin strips; clean the shrimp and pat them dry. Cut the Chinese cabbage, snow peas, and red pepper into stir-fry pieces, separate the white and green parts of the scallions, and finely chop the garlic and ginger. In a bowl, mix the soy sauce, oyster sauce, potato starch, and a small portion of the water until smooth.
Bring the remaining water to a boil and cook the Chinese noodles for 3 to 4 minutes, until flexible but still firm. Drain, rinse them briefly under cold water, and drain very thoroughly; then toss with a small portion of the vegetable oil to keep them loose without making them greasy.
Heat the wok over high heat and add more of the vegetable oil. Sear the beef first for 1½ to 2 minutes, until browned at the edges but still juicy, then remove it. Stir-fry the chicken for 2 to 3 minutes, until browned with no pink center, and reserve it. Finally cook the shrimp for 1 to 2 minutes, just until pink and opaque, then remove them as well.
With the wok still very hot, add the remaining vegetable oil, the garlic, ginger, and white parts of the scallions; stir-fry for 20 seconds, until fragrant. Add the red pepper, snow peas, and Chinese cabbage and toss for 1½ to 2 minutes, until piping hot, glossy, and still crisp.
Return all three proteins to the wok, add the noodles, and stir the prepared sauce before pouring it around the hot edge. Toss for 1 to 2 minutes, lifting everything from underneath, until the sauce boils, thickens lightly, and leaves the noodles glossy and loose, with no puddle underneath. Turn off the heat, add the sesame oil and green parts of the scallions, toss a few times, and serve immediately. If every protein is still juicy and the vegetables retain crunch, it came out properly taypá. 🔥
