Cold black tea, sweetened and balanced with a touch of lemon, served over ice. Brew it strong first, then cool it properly so it stays clean, not bitter. Refreshing, simple, and perfect for a pitcher.

Heat part of the water until it boils, turn off the heat, and add the black tea. Cover and steep for 4 to 5 minutes, until the color is dark and the aroma is clean. Do not leave it longer: more minutes do not mean more flavor, they mean bitterness.
Strain the concentrate without pressing the black tea too hard. It should be strong but clean; squeezing the leaves pulls tannins and makes the tea feel dry in the mouth.
Dissolve the white sugar into the concentrate while it is still hot. Add the remaining water and the lemon juice little by little, tasting for balance: it should be sweet, fresh, and lightly tart.
Let the tea cool down for 10 minutes, then serve over ice
