Citrusy, spiced warmth defined by the kick of pisco and the sharp aroma of ginger. This is a traditional refuge for Andean nights, an infusion that comforts the soul and fights the cold with intensity. Bold, aromatic, and deeply Peruvian.

Slice the ginger thinly and squeeze the key lime. Measure the honey and pisco before heating; this drink comes together quickly and does not forgive distractions.
Heat the water with the ginger and cinnamon stick until gently boiling. Keep it there for 4 minutes, until the ginger aroma rises clearly and the cinnamon perfumes without taking over.
Turn off the heat, add the black tea, and steep for 3 minutes. Do not leave it longer for sport: the tea turns bitter and starts bossing the pisco around.
Turn what you find into an experience you can actually bring to your kitchen.

Strain the infusion and dissolve the honey while it is still hot. Add the key lime juice and stir; it should taste sweet, bright, and spiced without feeling heavy.
Off the heat, add the quebranta pisco and stir for 15 seconds. Serve immediately, very hot, with aromas of tea, lime, and ginger; it should warm without scraping the throat.
