A home-style Peruvian classic of golden spinach fritters. Soft inside with lightly crisp edges, they have the simple, familiar flavor that makes an everyday meal feel special. Quick, economical, and dangerously easy to reach for again.

Turn what you find into an experience you can actually bring to your kitchen.

Wash the spinach, drain it thoroughly, and roughly chop it; then finely chop the red onion and garlic. Remove as much water from the leaves as possible, since wet spinach makes the batter loose.
Heat one quarter of the vegetable oil in the skillet over medium heat and cook the onion with one quarter of the salt for 4 to 5 minutes, until translucent and soft. Add the garlic for 30 seconds, then immediately add the spinach; cook for 1 to 2 minutes, stirring, until wilted and the bottom of the skillet is nearly dry. Transfer everything to a bowl.
Beat the eggs with the remaining salt and pepper; gradually add the flour and mix until no dry pockets remain. Fold in the sautéed spinach mixture just until combined. The mixture should be thick enough to hold its shape on a spoon; if liquid collects at the bottom, mix briefly again before frying.
Return the skillet to medium heat and add the remaining vegetable oil gradually between batches. Shape the fritters with generous spoonfuls and flatten them slightly; cook for 2 to 3 minutes per side, until they have deeply golden edges, a firm surface, and a set center. Avoid crowding the skillet so they brown rather than steam.
Transfer the fritters to paper towels as soon as they leave the skillet and serve hot or warm. If they are golden outside, soft in the center, and hold together when lifted, they came out exactly right. And that's it—one of those simple recipes that tends to disappear before the second batch reaches the table. 😌
