A flexible, warm disc with the intoxicating aroma of freshly cooked corn. It is the heart of the Mexican table, an artisanal canvas that transforms every bite into a celebration of tradition and home. Perfect simplicity in every fold.

Rinse the dried corn and place it in a pot with the water and food-grade lime. Simmer gently for 30 minutes, until the skin loosens when rubbed; turn off the heat, cover and let it rest for 8 hours so the corn softens properly.
Drain the nixtamal and rinse it, rubbing with your hands to remove most of the loose skin. Do not make it laboratory-clean: a little skin adds character, but the water should no longer run milky.
Process the nixtamal in batches with the salt, adding the water little by little, only until a moist, compact masa forms. Knead for 5 minutes, until it feels smooth, cohesive and free of obvious hard bits.
Cover the masa and let it rest for
Turn what you find into an experience you can actually bring to your kitchen.

Divide the masa into 12 balls and keep them covered. Flatten each one between two sheets of plastic with a rolling pin until you get a thin, even disc; if it tears when lifted, it is either too dry or too thin.
Heat the griddle over medium-high heat and cook each tortilla for 45 seconds on the first side, 45 seconds on the second, and 20 more seconds at the end, until lightly speckled and able to puff a little. Keep them covered so the steam makes them flexible.
